Children love to spend time with their mom and dad, especially when they see them in the kitchen. But they do not always eat everything from their plates. With two young boys, it is sometimes a challenge to have my youngest try different foods. I discovered though that if he helped prepare the meal, it was easier for him to eat what he prepared, including vegetables and meat dishes. (I haven't gotten him to eat his tomatoes yet, though!)
Another thing I discovered is that if the child's plate looked fun, they would be more apt to eat most everything on the plate. For example, use cookie cutters to create fun sandwich shapes. They are great finger foods and makes cutting the crusts off (if the kids make you do that still) easy.
Make meals fun. Let the kids play with their food (occasionally and within guidelines). The child would probably prefer eating ants on a log or termites attack instead of plain ol' celery sticks. Be creative. What does your child like? Does he/she play with cars? Do they like spiders? Do they l ike to eat dirt? What food items can go together to make a car? Think of cucumber, banana or zucchini sliced into discs for wheels. A stack of sandwich slices to create the car base (stack different-sized layers). Have them build different things with a variety of food items you prepare (carrot sticks, raisins, nuts, celery sticks, etc) The glue can be peanut butter, cream cheese. The paint can be ketchup, mustard, mayonaisse. Don't forget the lettuce!
